Every Wednesday we will be featuring a healthy, low-glycemic recipe on the Low-GI Meals Blog. Sometimes this recipe will be one from our book that we want to share with you and other times it will be a recipe that we’ve tried for our families.
Today we are sharing a recipe from our book, Low-Glycemic Meals in Minutes.
Every one loves pancakes; they are a delicious way to start the day but pancakes can be high in fat and high on the glycemic index. However, our Hearty Oatmeal Pancakes are a great, healthy, low-glycemic alternative to most recipes.
Hearty Oatmeal Pancakes
Makes 4 to 6 servings
Ingredients:

½ cup slow cook oats

½ cup low-fat plain yogurt

½ cup skim milk
-
2 large eggs
-
1 tbsp canola oil
-
2 tbsp brown sugar, packed

½ tsp salt
-
1 tsp baking powder
-
1 cup whole wheat flour
Directions:

In a medium bowl, combine oats, yogurt and milk. Set aside for 15-20 minutes to let the oats soften.

When the oats are finished soaking, beat in the egg and oil; mix well. Add the sugar and salt, then baking powder and flour. Stir until just moistened. For best results, let the batter stand for 5 minutes before cooking.

Heat a lightly oiled or non-stick griddle over medium heat (375 F for an electric frying pan).

For each pancake, pour ¼ cup batter onto the griddle. Turn when the tops are covered with bubbles and look dry.

Serve with applesauce, yogurt or fresh fruit and enjoy!
