Kim’s Story
I have been battling my weight most of my life, always unhappy with the way I looked, and consequently missing out on things because of it (wouldn’t go swimming with the kids, etc.). The many diet and exercise programs I tried didn’t bring me a lot of success. Working out 3 to 4 times a week was making me stronger, but I still couldn’t lose that extra 20 or 30 pounds. When I reached my 50s, I knew I needed to get serious. In June 2005, while at the gym, I overheard Cheryl Christian talking to a friend of mine. She was explaining her "Quick Prep method" which was shopping twice a week and going home and prepping the food right away. This ensured that when you opened your fridge, you had numerous low–glycemic healthy choices which took only 5 or 10 minutes to prepare. That really appealed to me, as I am a very disorganized person. One thing led to another, and Cheryl became part of my life.
I signed her up as my personal trainer and began using her Quick Prep method, incorporating low–glycemic foods into my diet. I learned the importance of proper nutrition and how the Glycemic Index (G.I.) worked. The G.I. made so much sense to me. I broke my meals into 5 or 6 smaller portions and found I was never hungry. Quick Prep was very helpful, as I tend to have a busy schedule. I quickly found out that if I neglected my prep days, I would end up grabbing for something that wasn’t a healthy choice. This time the effort to lose the weight worked! The first 5 pounds didn’t make much of an impact on me, because I have lost 5 pounds many times, but when I had lost 10 to 15 pounds, I was starting to feel great and needed to buy new clothes. I looked forward to my training sessions and weekly weigh–ins because of the results I was getting. It’s not over yet, but to date I have lost close to 30 pounds. There is no question that it requires effort and hard work, but it’s an incredible feeling when you see what you accomplish. It feels even better when you have everyone you know telling you how good you look. There is nothing quite like it!
Tom’s Story
I am 47 years old and a captain in my city’s fire department. Due to a biking accident, I was off work for 6 months, and the inactivity drove my weight up to around 240 lbs. Despite various attempts, I had a hard time losing the extra weight. Then I was introduced by my sister–in–law, a dietitian, to a five–day low–glycemic high–fiber cleanse, which included meal replacement shakes, nutritional bars and quality nutritional supplements. Following the cleanse, I started on a 12–week trim down challenge (similar to the Phase 1 outlined in this book). This lifestyle change has been awesome for me. I wake up in the morning feeling energetic and continue to feel good throughout the day without insatiable carbohydrate cravings. Well let me tell you, I had failed at trying to loose weight for a long time until I discover you marvellous book. My husband is diabetic and as such loves to eat a lot and food is a great part of his enjoyment and mine. All the other diet recipes I followed were just not to his liking and resulted in more disagreement over what to eat for our meals. But I am so thrilled that he and I like every one of you recipes and that we both are now loosing weight steadily, I have lost 32 lbs so far and my husband around 15 lbs. Your use of spices is spectacular in giving your recipe this homey sensation so that we don’t get bored with too much ’exotic’ on the regular basis.
